A: Yes, of course you can

Q: Do the t-connectors hold up over time? Is it better to do a solder connection?

A: Yes.The connectors are your typical wire tap connectors which in my case did not make a solid connection during installation and would not work. Another one snapped in half when pried apart. So a better type of connector would would be prudent.

Q: Where is the RCA adapter to use on a bigger car radio screen?

A: Look at the wiring diagram. There is no RCA connector. If you wish, you can splice into the wiring harness and attach a RCA connector with which you can attach to your bigger monitor.
